Life On The Go

At twenty something, I often find myself looking at the clock at 7 PM and wondering where the day went. Between class, work, errands and homework, the hours of the day seem to fly by. With such a busy schedule, I realized that one of the biggest things that was being affected was my diet. After running out of the house in the morning, I was lucky if I even had time to grab a bag of chips, and once I returned home at night, I was hungry enough that I would eat anything in sight. I knew that I had to do something to adapt to my busy schedule and get my diet back on track. I know I am not the only person with a busy schedule, so I wanted to share one of the tricks that I have tried for the past few weeks.

I knew that I needed something that was small, easy and healthy to take with me during the day. Small because no one wants to be that person who whips out a full sized sandwich or smelly leftovers in a class of 200 people. Easy because I needed to be able to grab it as I was running out of the house in the morning. Healthy because I was tired of eating junk just because I was busy. 

Of course, the first place I began to look was Pinterest. A few years ago, Pinterest was at its peak. Almost everyone, including some boys, had a Pinterest account and were spending hours a day adding to custom boards that you could create for your personal interests. Although I may not spend as much time on the app as I used to, Pinterest is still one of my go-to apps for decorating, recipes, outfits, etc. I began browsing "Easy Healthy Snacks" and came across a recipe that seemed to fit all of the areas I was looking for. Another plus was that it only required 5 ingredients. I've provided a link to the recipe here.

So far, these energy bites have solved all of my problems. Instead of doing bars, I actually rolled them into balls to make them even easier to sneak during class. I also made a batch this week without the coconut and I liked them even more. At first, I was worried that my sweet tooth would take over and I would not be able to stop eating them, but honestly 2 or 3 of them is plenty. For the past 2 weeks I have made a batch on Sunday and then pre-packaged 3 in a plastic bag. In total, the ingredients cost about $10, but you will have plenty of each ingredient left to reuse the next week. 

These energy bites are easy to grab in the morning and are the perfect afternoon snack. I have also found that I am less hungry when I get home and have a little more time to find a healthy dinner option.
